Chicken – 6 pieces ( approx 1lb), washed & skinned drumsticks


1 1/2 cups Yogurt, well beaten
1 tbsp Ginger Paste
1 tbsp Garlic Paste
1/4 tsp Red Chili Powder
1/2 tsp Paprika
1 tbsp Tandoori Masala
1 tsp Coriander Powder
Salt – to taste
1 tbsp Lemon Juice
Red Food Color – 2 drops, optional (will NOT be using)
Green Chili – to taste, ground

They include a recipe for the Tandoori Masala but not for Garam Masala (which is needed to make the Tandoori Masala). This is the recipe I’ll be using:

4 tbsps coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns
1 1/2 tsps black cumin seeds (shahjeera)
1 1/2 tsps dry ginger
3/4 tsp black cardamom (3-4 large pods approx)
3/4 tsp cloves
3/4 tsp cinnamon (2 X 1” pieces)
3/4 tsp crushed bay leaves
