Low-Carb Muffins

I can’t remember if I posted this before but I was so excited to see a muffin recipe without flax meal!


2 cups almond flour/almond meal
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, melted
4 eggs
1/3 cup water
Sweetener to taste — about 1/3 cup usually works well — liquid zero carb sweetener such as EZSweets preferred

And this one … yum!

Coconut Raspberry Muffins


3 eggs (room temperature – important)
1/3 cup coconut flour
1/4 cup melted butter
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 cup sugar substitute equivalent (liquid preferred)
1/2 teaspoon baking powder
2-5 Tablespoons water (see below)
1/2 cup raspberries or blueberries
