Mmmmm … cookies! I made some once that were peanut flour, peanut butter, and protein powder. I’m not sure where that recipe ended up but they were tasty (though fragile)! These should be fantastic (just substitute the honey for your sweetener of choice)!

1 cup blanched almond flour
½ teaspoon celtic sea salt
¼ teaspoon baking soda
½ cup creamy peanut butter or sunbutter
¼ cup agave nectar or honey
2 tablespoons vegan shortening
1 teaspoon vanilla extract
