3 Minute Chocolate Cake

Once again, Linda of Linda’s Low Carb Menus and Recipes (GENAW) has done it.  I took my blood sugar this morning and it was 64.  Perfect excuse to have chocolate cake for breakfast!  I have recently read some suggest more cocoa and sweetener, so I doubled the cocoa and added 5 (instead of 3) Tablespoons of Splenda.  This is very tasty with a texture that is pretty dang close to cake AND doesn’t have nasty flax meal!


1/4 cup almond flour, 1 ounce
1 tablespoon cocoa
1/4 teaspoon baking powder
3 tablespoons plus 1 teaspoon granulated Splenda or equivalent liquid Splenda
2 tablespoons butter, melted
1 tablespoon water
1 egg
