I’ve made sausage a few times and can’t believe I never posted any recipes. Here’s a great one from buttoni.

Homemade Italian Sausage

1 1/2 lb. ground pork
1/2 lb. ground beef
1/4 c. chopped parsley
1 clove minced garlic
¾ tsp. fennel, crushed
1 tsp. dried oregano, crushed
1/2 tsp. coarse black pepper
1/4 tsp. salt
