I originally shared this on Facebook and my aforementioned Oopsie-obsessed friend is now in love with this recipe! I have yet to make it (found it when I was mid-ice cream mode and wanted chocolate) but she mentioned that even her neighbor (non-low-carber) loved this!



1 1/2 cups almond flour
1/4 cup coconut flour
1 1/2 tsp baking powder
1 tsp xanthan gum
1/2 tsp salt
3/4 cup creamy peanut butter
1/2 cup Kelapo coconut oil, softened
1/2 cup Swerve Sweetener
1 large egg, room temperature
1 tsp vanilla extract

Peanut Butter Ice Cream Filling:

8 oz cream cheese, softened
3/4 cup creamy peanut butter
1/2 cup powdered Swerve Sweetener
1/2 tsp vanilla extract
1/4 tsp stevia extract
3/4 cup heavy cream, room temperature
