Pan-fried chicken in mushroom sauce

Ingredients

2 tbsp sunflower oil
6 large, free-range chicken legs, halved at the joint so you have 6 thighs and 6 drumsticks
700ml (1 1/4 pts) chicken stock (or water)
50g (about 3 1/2 Tablespoons) butter
1 onion, finely diced
400g (about 1-3/4 cup) mixed wild mushrooms
300ml (1/2 pt) dry white wine (can use chicken stock instead)
284ml (about 1.2 cups) pot double cream (I know it doesn’t compare but heavy cream can be substituted for the double cream)
