And now you may understand after this post last night, I had to get off of Facebook!  Just use a sugar-free everything, and you’ll have a gluten free “scarf the whole thing” recipe!  Just keep in mind, this is definitely something you should wait to eat until after you have progressed to the point that you can handle this many carbs (roughly 7 grams per 2 Tablespoons of peanut butter alone).


Butter or virgin coconut oil for greasing muffin tin
2/3 cup sour cream
2 pastured eggs
1 cup organic natural peanut butter
3 Tbsp raw honey
3 Tbsp pure maple syrup (Use your preferred sugar substitute)
2 Tbsp pure vanilla extract
1/2 tsp aluminum free baking soda
1/8 tsp sea salt
1/4 cup roasted, salted peanuts, chopped
3/4 cup chocolate chips
